Time to Eat Those Greens!

I remember first stumbling across this recipe on Pick Up Limes and thought, "Yum, who would've thought that an all-veggie sandwich could look and taste SO good!?". Needless to say, I've loved making a variety of delicious sandwiches packed with all kinds of greens (and every other colour of the rainbow) since. Sandwiches are an amazing option for an easy, nutritious, satisfying lunch that you can take along with you to work or school. And the best thing about sandwiches is that they are incredibly versatile and you can pack a bit of everything inside of them!I even put together a short (very amateur) video to celebrate this sandwich made with my new favourite combination of green & purple veggies, including my Beetroot & Red Cabbage Sauerkraut.

Veggie-packed Hummus, Radish & Beetroot Sandwich

A delicious, filling, veggie-packed sandwich that will tickle your tastebuds and satisfy your tummy.

Makes: 1 sandwich

Veggie-packed Hummus, Radish & Beetroot Sandwich

Prep time:

Ingredients:
  • 2 slices whole grain bread of choice
  • 2 heaped Tbsp hummus
  • 2-3 radishes, thinly sliced
  • 1 handful baby spinach or other greens
  • 1/2 cup picked or roasted beetroot, sliced
  • 1/4 cucumber, sliced
  • 2-4 Tbsp red cabbage sauerkraut
  • 1 handful of microherbs (amaranth pictured here)
  • Instructions:
    1. Place the bread on a plate or chopping board and spread the hummus on one side of each slice.
    2. Thinly slice the radishes and layer them over the hummus, followed by the baby spinach/greens, sliced beetroot, cucumber and sauerkraut.
    3. Serve as an open-faced sandwich decorated with beautiful micro herbs, or turn into a handheld sandwich.
